  • 1.5 lbs Boneless skinless chicken breasts, cut into 1-inch cubes
  • 3 tablespoons Olive oil
  • 1/2 cup Grated Parmesan cheese
  • 4 cloves Garlic, minced
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon Onion powder
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 tablespoon Fresh parsley, chopped (for garnish)
  • Wooden or metal skewers

Instructions

  1. Start by patting the chicken breasts dry with a paper towel. This helps the oil and spices stick better. Cut the chicken into uniform 1-inch cubes so they cook evenly on the skewers.
  2. In a large mixing bowl, combine the olive oil, minced garlic, grated parmesan cheese, dried oregano, onion powder, salt, and pepper. Whisk the ingredients together until they form a thick, pasty marinade.
  3. Add the chicken cubes to the bowl and toss thoroughly. Ensure every piece of chicken is well-coated with the garlic and parmesan mixture. If you have time, let it sit for 10-15 minutes to allow the flavors to penetrate the meat.
  4. Thread the seasoned chicken pieces onto your skewers. If using wooden skewers, make sure they have been soaked in water for at least 20 minutes to prevent burning. Do not crowd the pieces too tightly; leave a tiny bit of space between them for the heat to circulate.
  5. Preheat your grill or oven (400°F/200°C). Cook the skewers for about 12-15 minutes, turning them halfway through. The chicken is done when it reaches an internal temperature of 165°F (74°C) and the parmesan has formed a golden-brown crust.
  6. Remove the skewers from the heat and let them rest for a few minutes. Sprinkle with fresh chopped parsley and an extra dusting of parmesan cheese before serving warm.
