  • 1.5 lbs chicken breast, cut into 1-inch cubes
  • 4 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon cracked black pepper
  • 1/2 teaspoon red pepper flakes (optional for heat)
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh lemon juice
  • 2 cups cooked jasmine rice or quinoa
  • 2 cups steamed broccoli florets

Instructions

  1. Pat the chicken breast cubes dry with a paper towel to ensure a good sear. In a large mixing bowl, toss the chicken with olive oil, salt, black pepper, and red pepper flakes until every piece is evenly coated.
  2. Heat a large skillet over medium-high heat. Add the chicken in a single layer, making sure not to crowd the pan. Cook for 5 to 7 minutes, turning occasionally, until the chicken is golden brown and cooked through to an internal temperature of 165°F (74°C).
  3. Reduce the heat to medium. Move the chicken to the sides of the pan and add the butter to the center. Once melted, stir in the minced garlic and cook for about 1 minute until fragrant, being careful not to let the garlic burn.
  4. Toss the chicken back into the center of the pan to coat it thoroughly in the garlic butter sauce. Stir in the lemon juice and fresh parsley. Remove the skillet from the heat immediately to keep the chicken tender.
  5. Divide the cooked rice and steamed broccoli among four bowls. Top each bowl with a generous portion of the garlic butter chicken, drizzling any remaining sauce from the pan over the top.
