Ingredients

Scale
  • 8–10 slices of whole-grain or protein-enriched bread, cubed
  • 1 cup liquid egg whites
  • 2 large whole eggs
  • 1 cup plain non-fat Greek yogurt
  • 1 cup unsweetened almond milk (or milk of choice)
  • 2 scoops vanilla whey or casein protein powder
  • 1 tablespoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup fresh blueberries or raspberries (optional)
  • Stevia or monk fruit sweetener to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish with non-stick cooking spray. Cut your bread slices into 1-inch cubes and spread them evenly across the bottom of the dish.
  2. In a large mixing bowl, whisk together the egg whites, whole eggs, Greek yogurt, and almond milk until smooth. Slowly add the protein powder, cinnamon, vanilla extract, salt, and sweetener. Whisk vigorously to ensure there are no clumps of protein powder left.
  3. Pour the protein mixture evenly over the bread cubes in the baking dish. Use a spatula to gently press down on the bread so every piece is submerged and starts absorbing the liquid. If using berries, sprinkle them over the top now.
  4. Place the dish in the center of the oven and bake for 40 to 45 minutes. The casserole is done when the top is golden brown and the center is set and no longer jiggly. Let it cool for 5 minutes before slicing.
