  • 1 cup low-fat cottage cheese
  • 1 cup shredded Gruyere or Monterey Jack cheese
  • 1/4 cup cooked bacon bits or diced ham
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • Cooking spray (for the mold)
  • 2 cups hot water (for the roasting pan)

Instructions

  1. Preheat your oven to 300°F (150°C). Place a large roasting pan or a deep baking sheet on the middle rack. Lightly grease a silicone muffin tray or egg bite mold with cooking spray to ensure the bites pop out easily after baking.
  2. In a blender, combine the eggs, cottage cheese, salt, and pepper. Blend on high for about 30 to 45 seconds until the mixture is completely smooth and slightly frothy. This step is crucial for getting the right texture.
  3. Pour the egg mixture into a large bowl and fold in the shredded cheese and cooked bacon bits. Alternatively, you can divide the cheese and bacon evenly among the muffin cups first and then pour the egg mixture over the top.
  4. Place the silicone mold inside the roasting pan in the oven. Carefully pour the hot water into the roasting pan around the mold, filling it about halfway up the sides of the muffin cups. This creates steam, which prevents the eggs from browning or becoming tough.
  5. Bake for 20 to 25 minutes, or until the centers are set and no longer jiggle. Remove the mold from the water bath and let the egg bites cool for 5 minutes before popping them out. This resting time helps them firm up.
