Heat the olive oil in a large non-stick skillet over medium heat. Add the diced bell peppers and onions. Sauté for about 3 to 5 minutes, or until the onions become translucent and the peppers are slightly softened.
Add the ground turkey sausage to the skillet with the vegetables. Use a wooden spoon or spatula to break the meat into small crumbles. Cook for 6 to 8 minutes until the turkey is browned and cooked through. Season with garlic powder, salt, and pepper.
Toss the fresh baby spinach into the skillet. Stir constantly for 1 to 2 minutes until the spinach is just wilted. Remove the sausage and vegetable mixture from the pan and set it aside in a bowl.
In a small bowl, whisk the eggs together. Lower the heat to medium-low and pour the eggs into the same skillet. Gently stir the eggs until they are soft and fluffy. If using cheese, sprinkle it over the eggs right before they finish cooking so it melts perfectly.
Divide the turkey sausage and vegetable mixture into two bowls. Top each with a generous portion of the scrambled eggs. Garnish with fresh chives or green onions and serve immediately.
