  • 12 oz Protein-enriched pasta (chickpea or lentil pasta works great)
  • 1 lb Large shrimp, peeled and deveined
  • 2 cups Fresh baby spinach
  • 1/2 cup Sun-dried tomatoes, chopped
  • 3 cloves Garlic, minced
  • 1 cup Low-sodium chicken or vegetable broth
  • 1/2 cup Non-fat plain Greek yogurt
  • 1/4 cup Grated Parmesan cheese
  • 1 tablespoon Olive oil
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon Red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Step 1: Boil the Pasta – Bring a large pot of salted water to a boil. Add your protein pasta and cook according to the package instructions until al dente. Drain the pasta, but keep about half a cup of the pasta water just in case you want to thin out the sauce later.
  2. Step 2: Sear the Shrimp – While the pasta is cooking, heat olive oil in a large skillet over medium-high heat. Season the shrimp with salt, pepper, and oregano. Add the shrimp to the skillet and cook for 2 minutes per side until they turn pink and opaque. Remove the shrimp from the pan and set them aside on a plate.
  3. Step 3: Sauté Aromatics – In the same skillet, turn the heat down to medium. Add the minced garlic and chopped sun-dried tomatoes. Sauté for about 1-2 minutes until the garlic is fragrant, being careful not to let it burn.
  4. Step 4: Create the Creamy Sauce – Pour the broth into the skillet to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for 3 minutes. Reduce heat to low and whisk in the Greek yogurt and Parmesan cheese until the sauce is smooth and creamy.
  5. Step 5: Wilt the Spinach – Add the fresh baby spinach to the sauce. Stir gently for 1-2 minutes until the spinach has wilted into the sauce. If the sauce seems too thick, add a splash of the reserved pasta water.
  6. Step 6: Combine and Serve – Add the cooked pasta and the seared shrimp back into the skillet. Toss everything together until the pasta is thoroughly coated in the creamy Tuscan sauce. Garnish with fresh parsley and extra red pepper flakes if you like a little heat.
