1 cup cottage cheese (low fat or full fat both work)
2 large eggs
1/2 cup rolled oats (or oat flour)
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon baking powder
1 pinch of salt

Instructions
Place the cottage cheese, eggs, rolled oats, vanilla extract, cinnamon, baking powder, and salt into a high-speed blender. Blend on high for about 30 to 45 seconds until the mixture is completely smooth and no oat bits remain.
Place a non-stick skillet or griddle over medium-low heat. It is important not to use high heat, as these pancakes contain protein that can burn quickly. Lightly coat the surface with cooking spray or a small amount of butter.
Once the pan is hot, pour about 1/4 cup of batter for each pancake. Space them out so they are easy to flip. Because the batter is slightly thinner than traditional mix, small pancakes work best.
Cook the pancakes for 2 to 3 minutes on the first side. Look for small bubbles to form on the surface and the edges to look set. Carefully flip them with a spatula and cook for another 1 to 2 minutes until they are golden brown and cooked through.
Remove the pancakes from the heat and plate them immediately. Repeat the process with any remaining batter.
