  • 1 cup cottage cheese (2% or 4% fat works best)
  • 1/2 cup shredded Gruyère or Swiss cheese
  • 1/4 cup cooked bacon bits or chopped spinach
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Non-stick cooking spray

Instructions

  1. Preheat your oven to 300°F (150°C). To mimic the Starbucks steam-cooked texture, place a baking dish filled with an inch of hot water on the bottom rack of the oven. This creates a moist environment that prevents the eggs from becoming rubbery. Lightly grease a silicone muffin pan with non-stick spray.
  2. In a blender, combine the eggs, cottage cheese, salt, pepper, and garlic powder. Blend on high for about 30 seconds until the mixture is completely smooth and slightly frothy. This step is crucial for incorporating the cottage cheese so there are no lumps.
  3. In a small bowl, toss your shredded Gruyère cheese and cooked bacon (or spinach) together. Evenly distribute this mixture into the bottom of each muffin cup in your silicone pan.
  4. Carefully pour the blended egg and cottage cheese mixture over the fillings in the muffin cups. Fill each cup about 3/4 of the way full to allow for a slight rise during baking.
  5. Place the muffin tin on the middle rack, directly above the water bath. Bake for 20 to 25 minutes, or until the centers are just set and no longer jiggly. Avoid overbaking, as this can cause the bites to deflate or become tough.
  6. Remove the pan from the oven and let the egg bites sit for 5 minutes. Gently run a plastic knife or spatula around the edges and pop them out of the silicone mold. Serve immediately while warm.
