  • 1 cup low-fat or full-fat cottage cheese (small curd works best)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano or Italian seasoning
  • A pinch of salt and black pepper
  • Optional: 1 tablespoon grated parmesan cheese for extra crunch

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with high-quality parchment paper. This is crucial because the cheese will stick to the pan if you do not use parchment paper.
  2. In a medium mixing bowl, combine the cottage cheese, garlic powder, onion powder, dried oregano, salt, and pepper. If you are using parmesan cheese, fold it in now. Mix well until all the curds are evenly coated with the spices.
  3. Scoop small tablespoons of the mixture onto the prepared baking sheet. Space them at least 2 inches apart. Use the back of the spoon to flatten each mound into a thin, even circle. The thinner you spread them, the crispier they will be.
  4. Place the tray in the oven and bake for 15 to 20 minutes. Watch them closely after the 15-minute mark. You want the edges to be golden brown and the centers to look dry and slightly toasted.
  5. Remove the tray from the oven and let the chips sit on the baking sheet for at least 5 minutes. They will continue to firm up and become crispy as they cool. Once cooled, gently peel them off the parchment paper and enjoy.
