Instructions
Preheat your oven to 350°F (175°C). Lightly grease a non-stick donut pan with cooking spray or a small amount of coconut oil to ensure the donuts pop out easily after baking.
In a medium-sized mixing bowl, whisk together the oat flour, protein powder, sweetener, baking powder, and ground cinnamon. Ensure there are no large clumps of protein powder for a consistent batter.
In a separate bowl, whisk the egg, Greek yogurt, almond milk, and vanilla extract until the mixture is smooth and well-combined.
Pour the wet ingredients into the dry ingredients. Use a spatula to gently fold the mixture together until just combined. Be careful not to overmix, as this can make the donuts tough.
Spoon the batter into the prepared donut pan, filling each cavity about three-quarters full. You can also use a piping bag or a plastic bag with the corner cut off for a cleaner finish.
Bake for 10 to 12 minutes, or until a toothpick inserted into a donut comes out clean. Allow the donuts to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Once cooled, whisk together the optional glaze ingredients and drizzle over the donuts. Sprinkle a little extra cinnamon on top for a beautiful presentation.
