4 large Granny Smith or Honeycrisp apples, thinly sliced
1 tablespoon lemon juice

2 scoops (approx 60g) vanilla whey or casein protein powder
1 cup rolled oats (old fashioned)
1/2 cup almond flour
2 tablespoons coconut oil, melted
2 tablespoons pure maple syrup or sugar-free sweetener

Instructions
Start by preheating your oven to 350°F (175°C). Wash, peel, and thinly slice your apples. Place the slices in a large mixing bowl and toss them with the lemon juice, cinnamon, and vanilla extract until every slice is well-coated. This ensures the base is flavorful and the apples don’t brown too quickly.
In a separate medium-sized bowl, combine the rolled oats, protein powder, almond flour, and a pinch of salt. Pour in the melted coconut oil and your choice of sweetener. Use a fork to mix everything together until it forms a crumbly, sandy texture. If the mixture is too dry, you can add a teaspoon of water or more oil.
Transfer the seasoned apple slices into an 8×8 inch baking dish, spreading them out into an even layer. Evenly sprinkle the protein crumble mixture over the top of the apples, making sure to cover them completely for a uniform crunch.
Place the dish in the oven and bake for 30 to 35 minutes. You will know it is done when the apples are tender and the topping has turned a beautiful golden brown. Remove from the oven and let it sit for about 5 minutes before serving to allow the juices to thicken.
