3 cups cooked brown rice (preferably day-old and chilled)
3 large eggs, lightly beaten
1 cup frozen peas and carrots blend
1/2 cup shelled edamame (for extra protein)
3 green onions, sliced (whites and greens separated)
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
3 tablespoons low-sodium soy sauce or tamari
1 tablespoon toasted sesame oil
1 tablespoon avocado oil or olive oil

Instructions
Heat half of the avocado oil in a large skillet or wok over medium-high heat. Add the chicken pieces in a single layer. Season with a pinch of pepper and cook until golden brown and cooked through, about 5-6 minutes. Remove the chicken from the pan and set aside on a plate.
In the same pan, reduce the heat slightly and add a tiny drizzle of oil if needed. Pour in the beaten eggs. Let them sit for a few seconds, then gently scramble them until they are just set but still soft. Remove the eggs and place them on the plate with the chicken.
Add the remaining oil to the pan. Toss in the white parts of the green onions, minced garlic, and grated ginger. Stir-fry for about 30 seconds until fragrant. Add the frozen peas, carrots, and edamame. Sauté for 3-4 minutes until the vegetables are tender and any excess moisture has evaporated.
Turn the heat back up to high. Add the chilled cooked rice to the pan with the vegetables. Break up any clumps with a spatula. Spread the rice out and let it sit for a minute to get slightly crispy, then stir. Repeat this for about 3 minutes to ensure the rice is heated through and textured.
Add the cooked chicken and eggs back into the pan with the rice. Pour the soy sauce and toasted sesame oil over the mixture. Toss everything together vigorously for 1-2 minutes until the sauce is evenly distributed and the flavors have merged.
Turn off the heat. Fold in the green parts of the sliced onions. Taste and add an extra splash of soy sauce if desired. Serve immediately while steaming hot.
