Instructions
Step 1: Prepare the Protein – If you haven’t already, grill or pan-sear your chicken breasts until they reach an internal temperature of 165°F. Once cooled slightly, slice the chicken into thin, bite-sized strips so they fit easily inside the wrap.
Step 2: Toss the Filling – In a large mixing bowl, combine the chopped Romaine lettuce, sliced chicken, shredded Parmesan cheese, and crushed croutons. Drizzle the Greek yogurt Caesar dressing over the mixture and toss thoroughly until every leaf and piece of chicken is evenly coated.
Step 3: Season and Zest – Squeeze the fresh lemon juice over the salad mixture and add a generous amount of cracked black pepper. Give it one final quick toss to incorporate the bright citrus notes which help cut through the richness of the dressing.
Step 4: Assemble the Wrap – Lay the tortillas flat on a clean surface. Divide the chicken Caesar mixture evenly between the two tortillas, placing the filling in the center while leaving enough room at the edges for folding.
Step 5: Fold and Roll – Fold the left and right sides of the tortilla inward toward the center. While holding the sides, grab the bottom edge of the tortilla and roll it tightly away from you until a secure wrap is formed.
Step 6: Optional Searing – For an extra crunch and to help seal the wrap, place a dry non-stick pan over medium heat. Place the wrap seam-side down in the pan and toast for 1 minute per side until the tortilla is golden brown and slightly crisp.
