  • 2 large sweet potatoes, peeled and cubed into 1-inch pieces
  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized chunks
  • 3 tablespoons extra virgin olive oil, divided
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 4 cups fresh kale or baby spinach
  • 1 large avocado, sliced
  • Optional: Fresh parsley or cilantro for garnish
  • Optional: A squeeze of fresh lime juice

Instructions

  1. Step 1: Preparation and Preheating. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or silicone mats to prevent sticking and make cleanup easier. Peel the sweet potatoes and cut them into uniform cubes so they cook evenly.
  2. Step 2: Seasoning the Sweet Potatoes. Place the cubed sweet potatoes in a large mixing bowl. Drizzle with 1.5 tablespoons of olive oil and season with half of the salt, pepper, and smoked paprika. Toss well to ensure every piece is coated, then spread them out in a single layer on one side of the baking sheet.
  3. Step 3: Seasoning the Chicken. In the same mixing bowl (no need to wash it), add the chicken chunks. Add the remaining olive oil, garlic powder, onion powder, oregano, and the rest of the paprika, salt, and pepper. Mix thoroughly until the chicken is well-seasoned.
  4. Step 4: Roasting the Ingredients. Place the chicken on the other side of the baking sheet. If your sheet is too small, use a second one. Bake in the preheated oven for 20 to 25 minutes. At the halfway point, use a spatula to toss the potatoes and chicken to ensure even browning. The chicken is done when it reaches an internal temperature of 165°F (74°C).
  5. Step 5: Assembling the Bowl. While the chicken and potatoes roast, divide the fresh kale or spinach among four bowls. Once the roasted ingredients are ready, layer them over the greens. The heat from the chicken will slightly wilt the greens for a better texture. Top each bowl with fresh avocado slices and a squeeze of lime juice.
