4 large high-protein or whole-wheat tortillas
2 cups shredded romaine lettuce
1/2 cup shredded carrots
1/4 cup diced celery
2 tablespoons crumbled blue cheese or light ranch dressing (optional)
Instructions
In a medium-sized mixing bowl, whisk together the plain Greek yogurt, buffalo hot sauce, and garlic powder. The yogurt provides a creamy base while adding extra protein, and the garlic powder adds a boost of savory flavor.
Add the shredded or diced cooked chicken breast to the bowl with the sauce. Stir well until every piece of chicken is thoroughly coated in the spicy buffalo mixture. If you prefer a more “wet” wrap, you can add an extra splash of buffalo sauce at this stage.
Lay the tortillas out on a clean flat surface. If the tortillas are stiff, you can warm them in the microwave for 10 seconds to make them easier to fold. This prevents them from tearing during the assembly process.
Divide the shredded lettuce, carrots, and celery evenly among the four tortillas, placing them in the center of each wrap. Top the vegetables with a generous portion of the buffalo chicken mixture. Add a sprinkle of blue cheese crumbles if you enjoy that classic flavor pairing.
Fold the sides of each tortilla inward, then roll them up tightly from the bottom to the top. Slice them in half diagonally if desired, and serve immediately. For a crispy finish, you can lightly toast the assembled wrap in a dry pan over medium heat for one minute per side.
