Ingredients

Scale
  • 8 large eggs
  • 1/2 cup liquid egg whites
  • 1 lb lean ground turkey or chicken sausage
  • 1 cup canned black beans, rinsed and drained
  • 1 cup fresh baby spinach, chopped
  • 1 cup shredded low-fat cheddar cheese
  • 4 large whole wheat or high-fiber tortillas
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 teaspoon olive oil

Instructions

  1. Step 1: Cook the Protein Heat the olive oil in a large non-stick skillet over medium-high heat. Add the ground turkey or chicken sausage. Break the meat apart with a spatula and cook until it is browned and cooked through, about 7 to 10 minutes. Season with garlic powder, salt, and pepper. Remove the meat from the pan and set it aside in a bowl.
  2. Step 2: Scramble the Eggs In a medium bowl, whisk together the whole eggs and the egg whites until well combined. Lower the skillet heat to medium and pour in the egg mixture. Stir occasionally with a spatula, folding the eggs over until they are soft and scrambled. Just before they are finished, fold in the chopped spinach until it begins to wilt.
  3. Step 3: Combine the Filling Add the cooked meat and the black beans into the skillet with the eggs and spinach. Gently toss everything together for 1 to 2 minutes so the flavors meld and the beans are warmed through. Taste and add more seasoning if necessary.
  4. Step 4: Assemble the Burritos Lay the tortillas flat on a clean surface. Divide the egg and meat mixture evenly among the four tortillas, placing the filling in the center. Sprinkle 1/4 cup of shredded cheese over the top of each portion.
  5. Step 5: Fold and Seal Fold the sides of the tortilla inward, then roll from the bottom up to create a tight burrito. If you prefer a crispy exterior, place the rolled burritos back in the skillet for 1 minute per side until the tortilla is golden brown and the cheese is fully melted.
