1 lb lean ground turkey sausage or chicken sausage
6 large eggs
1 cup liquid egg whites
1 red bell pepper, diced
1 small yellow onion, finely chopped
1 cup canned black beans, rinsed and drained
1.5 cups shredded sharp cheddar cheese
2 cups fresh baby spinach, chopped
1 teaspoon garlic powder
Salt and pepper to taste

Instructions
In a large non-stick skillet over medium heat, add the ground turkey sausage. Use a spatula to break it into small crumbles as it cooks. Once the meat is browned and cooked through, remove it from the skillet and set it aside in a large mixing bowl.
In the same skillet, add the diced bell peppers and onions. Sauté for about 5 minutes until the onions are translucent and the peppers have softened. Stir in the chopped spinach at the last minute just until wilted. Transfer these vegetables into the bowl with the sausage.
Whisk together the whole eggs, egg whites, garlic powder, salt, and pepper in a medium bowl. Wipe the skillet clean if needed, then pour in the egg mixture. Cook over medium-low heat, stirring gently, until the eggs are scrambled and just set. Avoid overcooking, as they will be reheated later. Add the eggs and black beans to the large mixing bowl.
Toss all the ingredients in the mixing bowl together. Allow the mixture to cool completely to room temperature. This prevents steam from being trapped inside the tortilla, which causes sogginess during freezing.
Lay out a flour tortilla. Place about 1/2 cup of the filling in the center. Sprinkle with approximately 2 tablespoons of shredded cheese. Fold the sides in, then roll tightly from the bottom up. Repeat for all 8 tortillas.
Wrap each individual burrito tightly in parchment paper or aluminum foil. Place all wrapped burritos into a large freezer-safe Ziploc bag, squeeze out the excess air, and label it with the date.
