In a medium non-stick skillet over medium heat, lightly coat with cooking spray. Whisk the whole eggs and egg whites together in a bowl with a pinch of salt and pepper. Pour the mixture into the hot skillet and scramble gently with a spatula until they are soft and fluffy but not fully set.
Add the cooked turkey sausage crumbles and the rinsed black beans directly into the skillet with the eggs. Stir everything together and cook for another 2 minutes, or until the sausage and beans are heated through and the eggs are fully cooked.
While the filling is finishing, warm your whole wheat tortillas. You can do this by placing them in a dry pan for 30 seconds per side or wrapping them in a damp paper towel and microwaving them for 15 seconds. Warming them makes them pliable and prevents tearing during rolling.
Lay the warm tortillas flat on a clean surface. Divide the egg, sausage, and bean mixture evenly between the two tortillas, placing the filling in the center. Sprinkle the shredded cheddar cheese over the hot filling so it begins to melt.
Place the avocado slices on top of the cheese. Fold in the sides of the tortilla, then roll from the bottom up tightly to secure all the ingredients inside. Slice in half if desired and serve immediately.
