1 scoop (approx. 30g) of vanilla or unflavored whey protein powder
2 tablespoons of quick oats or oat flour
1/2 teaspoon of baking powder
1/2 teaspoon of ground cinnamon
A pinch of salt
Coconut oil or non-stick cooking spray for the pan
Instructions
Peel the ripe banana and place it in a medium-sized mixing bowl. Use a fork to mash it thoroughly until it reaches a smooth, liquid-like consistency with very few lumps remaining.
Crack the two eggs into the bowl with the mashed banana. Whisk them together until the mixture is well combined and slightly frothy.
Stir in the protein powder, oats (or oat flour), baking powder, cinnamon, and salt. Mix until just combined. Be careful not to over-mix, as this can make the pancakes a bit tough.
Place a non-stick skillet or griddle over medium-low heat. Lightly grease the surface with a small amount of coconut oil or a quick spray of non-stick cooking oil.
Pour about 1/4 cup of batter onto the hot skillet for each pancake. Cook for about 2 to 3 minutes, or until small bubbles begin to form on the surface and the edges look set. Carefully flip the pancakes and cook for another 1 to 2 minutes until golden brown on both sides.
