  • 3 ripe bananas, mashed
  • 2 large eggs
  • 1/2 cup plain Greek yogurt (non-fat or full-fat)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups oat flour (or almond flour)
  • 2 scoops (60g) vanilla or unflavored whey protein powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Optional: 1/4 cup walnuts or sugar-free chocolate chips

Instructions

  1. Preheat and Prep: Preheat your oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan with coconut oil or line it with parchment paper to ensure the bread does not stick to the sides.
  2. Mash the Bananas: In a large mixing bowl, peel the ripe bananas and mash them thoroughly with a fork or potato masher until they reach a smooth consistency with few lumps.
  3. Mix the Wet Ingredients: Add the eggs, Greek yogurt, and vanilla extract to the mashed bananas. Whisk everything together until the mixture is well-combined and creamy.
  4. Combine the Dry Ingredients: In a separate medium bowl, whisk together the oat flour, protein powder, baking soda, cinnamon, and salt. This ensures the leavening agents are evenly distributed.
  5. Create the Batter: Gently fold the dry ingredients into the wet ingredients using a spatula. Mix until just combined, being careful not to over-mix, which can make the bread tough. Fold in your walnuts or chocolate chips if using.
  6. Bake the Loaf: Pour the batter into your prepared loaf pan and smooth the top with a spatula. Bake for 40 to 50 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  7. Cool and Slice: Remove the pan from the oven and let the bread cool in the pan for about 10 minutes. Transfer the loaf to a wire rack to cool completely before slicing into 10 even pieces.
