4 large Granny Smith apples, peeled, cored, and sliced
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 tablespoon maple syrup or honey (optional)
1 cup rolled oats (gluten-free if needed)
2 scoops (approx. 60g) vanilla whey or plant-based protein powder
1/4 cup almond flour
2 tablespoons melted coconut oil or grass-fed butter
1/4 cup unsweetened almond milk (as needed)
A pinch of sea salt
Instructions
Preheat and Prepare: Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish with a small amount of coconut oil or non-stick cooking spray to ensure nothing sticks during the baking process.
Season the Apples: In a large mixing bowl, toss the sliced apples with the lemon juice, cinnamon, nutmeg, and maple syrup. Stir until every slice is evenly coated with the spices. Transfer the apple mixture into the prepared baking dish and spread it out into an even layer.
Mix the Protein Topping: In another bowl, combine the rolled oats, vanilla protein powder, almond flour, and a pinch of salt. Pour in the melted coconut oil or butter. Use a fork to mix until the texture becomes crumbly. If the mixture is too dry or powdery, add the almond milk one tablespoon at a time until it forms small clumps.
Assemble the Crumble: Sprinkle the protein oat mixture evenly over the top of the apples. Press down gently with your hands or a spoon to help the topping adhere to the fruit layer.
Bake and Cool: Place the dish in the oven and bake for 30 to 35 minutes, or until the apples are soft and bubbling and the topping has turned a beautiful golden brown. Remove from the oven and let it sit for 5 minutes before serving to allow the juices to thicken.
