  • 1/4 cup sliced almonds or chopped pecans
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt and black pepper to taste
  • 4 large whole wheat tortillas or large lettuce leaves
  • Fresh parsley for garnish (optional)

Instructions

  1. Step 1: Prepare the Chicken and Vegetables: If you haven’t already, shred or dice your cooked chicken breast into bite-sized pieces. Finely dice the celery and red onion to ensure you get a little bit of crunch in every bite without any large chunks overpowering the flavor.
  2. Step 2: Mix the Creamy Dressing: In a medium-sized mixing bowl, combine the Greek yogurt, lemon juice, garlic powder, salt, and pepper. Whisk these together until the dressing is smooth and well-incorporated. This ensures the seasoning is evenly distributed before you add the bulky ingredients.
  3. Step 3: Combine Ingredients: Add the prepared chicken, celery, onion, grapes, and nuts to the bowl with the yogurt dressing. Use a large spoon or spatula to fold everything together until every piece of chicken and fruit is lightly coated in the creamy sauce.
