2 cups Plain or Vanilla Greek Yogurt (full fat or 2% works best for creaminess)
3 tablespoons Honey or Maple Syrup
1 teaspoon Pure Vanilla Extract
1/4 cup Cocoa Powder or 1/3 cup Melted Dark Chocolate
1/2 cup Fresh Berries (strawberries, blueberries, or raspberries)
2 tablespoons Chopped Nuts (almonds, walnuts, or pistachios)
1 tablespoon Mini Chocolate Chips (optional)
A pinch of Sea Salt
Instructions
Prepare the Baking Sheet: Line a large rimmed baking sheet with parchment paper or a silicone baking mat. This ensures the yogurt doesn’t stick to the tray and makes it easy to lift the bark out once it is frozen solid.
Mix the Yogurt Base: In a medium mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir well until the sweetener is fully incorporated and the mixture is smooth. If you are using pre-sweetened vanilla yogurt, you may want to reduce the added honey.
Spread the Mixture: Pour the yogurt mixture onto the prepared baking sheet. Use a spatula or the back of a spoon to spread it evenly into a rectangle about 1/4 to 1/2 inch thick. Try to keep the thickness consistent so it freezes evenly.
Add the Chocolate Swirl: Drizzle the melted chocolate or cocoa powder mixture over the yogurt. Use a toothpick or a knife to gently swirl the chocolate into the yogurt, creating a marble effect. This adds a beautiful visual touch and ensures chocolate in every bite.
Apply Toppings: Sprinkle your chosen toppings evenly over the surface. Gently press the berries and nuts into the yogurt so they stay in place once frozen. Finish with a small pinch of sea salt to enhance the chocolate flavor.
Freeze Until Solid: Place the baking sheet in the freezer for at least 3 hours, or until the bark is completely firm and hard to the touch. Avoid checking it too early, as the center needs to be fully frozen.
Slice and Serve: Once frozen, remove the sheet from the freezer. Lift the parchment paper and use your hands to break the bark into irregular, bite-sized shards. Alternatively, you can use a sharp knife to cut it into clean squares.
