8 full sheets of Graham crackers (broken into 16 squares)
1.5 cups Plain Greek yogurt (0% or 2% fat)
2 scoops Vanilla protein powder (Whey or Casein work best)
1 tablespoon Honey or Maple syrup (optional)
1 teaspoon Vanilla extract
2 tablespoons Mini dark chocolate chips (optional mix-in)
Instructions
Step 1: Prepare the Cracker Base Break your graham cracker sheets in half so you have 16 equal squares. Line a small baking sheet or a flat airtight container with parchment paper. Lay 8 of the squares on the paper, leaving a bit of space between each one. This will be the bottom layer of your sandwiches.
Step 2: Mix the Protein Filling In a medium-sized mixing bowl, combine the Greek yogurt, protein powder, vanilla extract, and honey. Stir vigorously with a spoon or whisk until the mixture is completely smooth and no lumps of protein powder remain. If you are adding chocolate chips or berries, fold them in gently at the end.
Step 3: Assemble the Sandwiches Spoon approximately 2 to 3 tablespoons of the yogurt mixture onto the center of each graham cracker square on the tray. Use the back of the spoon to spread the filling slightly toward the edges. Place the remaining 8 graham cracker squares on top of the yogurt, pressing down very gently to create a sandwich.
Step 4: Freeze and Set Place the tray in the freezer and let the sandwiches set for at least 4 hours, or until the filling is firm. Once they are fully frozen, you can eat them immediately or transfer them to a sealed bag for longer storage.
