1 cup small curd cottage cheese (2% or 4% milk fat works best)
2 tablespoons everything bagel seasoning
Optional: 1/4 cup shredded parmesan cheese for extra crispness
Optional: A pinch of garlic powder
Instructions
Preheat your oven to 350°F (175°C). Line a large baking sheet with high-quality parchment paper or a silicone baking mat. This step is crucial because the cheese will stick to a bare pan.
Place small dollops of cottage cheese onto the prepared baking sheet. Use about one tablespoon per crisp, leaving at least two inches of space between them as they will spread while baking. Flatten them slightly with the back of the spoon.
Generously sprinkle the everything bagel seasoning over each mound of cottage cheese. If you are using the optional parmesan cheese, sprinkle a little bit on top of each mound now to help bind the crisp together.
Slide the tray into the oven and bake for 30 to 35 minutes. You are looking for the edges to be dark golden brown and the centers to appear dry and firm. Every oven is different, so start checking them at the 25-minute mark.
Remove the tray from the oven and let the crisps cool completely on the baking sheet. They will continue to firm up and become crunchy as they reach room temperature. Do not try to peel them off while they are still hot!
