Optional toppings: Red pepper flakes, hemp seeds, or sliced radishes
Instructions
Step 1: Prepare the Edamame If using frozen edamame, place them in a small bowl of warm water for a few minutes until thawed. Drain well. If you prefer a softer texture, you can steam the edamame for 2-3 minutes, but room temperature thawed edamame works perfectly for a bit of bite.
Step 2: Mash the Mixture In a medium bowl, combine the avocado, edamame, hummus, minced garlic, and lemon juice. Use a fork or a potato masher to crush the ingredients together. You can leave it slightly chunky for texture or mash it until it is mostly smooth, depending on your preference.
Step 3: Toast the Bread Place your bread slices in a toaster or under a broiler until they are golden brown and crispy. A sturdy bread like sourdough or a thick multi-grain works best to support the weight of the topping.
Step 4: Season and Spread Stir the salt and pepper into the avocado mixture. Spread a generous layer of the green mash onto each slice of warm toast, smoothing it out to the edges.
Step 5: Garnish and Serve Top the toast with red pepper flakes for heat, hemp seeds for extra protein, or a few thin slices of radish for crunch. Serve immediately while the toast is still warm.
