Ingredients

Scale
  • 1/2 cup rolled oats (old fashioned)
  • 1 scoop chocolate whey or plant-based protein powder
  • 1 tablespoon unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1/2 medium ripe banana, mashed
  • 1/2 cup unsweetened almond milk (or milk of choice)
  • 1 tablespoon creamy peanut butter
  • 1 tablespoon dark chocolate chips (optional)

Instructions

  1. Start by preheating your oven to 350°F (175°C). Lightly grease a small oven-safe ramekin or baking dish with a bit of coconut oil or non-stick cooking spray to ensure the oats don’t stick.
  2. For a smooth, cake-like texture, place the oats, protein powder, cocoa powder, baking powder, salt, mashed banana, and milk into a blender. Pulse until the mixture is smooth and well-combined. If you prefer a heartier texture, simply stir all the ingredients together in a mixing bowl until fully incorporated.
  3. Pour about two-thirds of the batter into your prepared baking dish. Drop a large dollop of peanut butter right into the center of the batter. Pour the remaining batter over the top to “hide” the peanut butter, then sprinkle with chocolate chips if you are using them.
  4. Place the dish in the oven and bake for 22 to 25 minutes. The edges should be firm, but the center should still have a slight bounce when touched. Do not overbake, as you want to maintain that moist, fudgy interior.
  5. Remove the oats from the oven and let them cool for about 5 minutes. This allows the structure to set so you can enjoy the perfect spoonful. Feel free to drizzle a little extra peanut butter on top before serving.
