  • 4 large Granny Smith or Honeycrisp apples, peeled and sliced
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 cup rolled oats
  • 2 scoops (approx 60g) vanilla whey or plant-based protein powder
  • 1/4 cup almond flour
  • 2 tablespoons maple syrup or honey
  • 3 tablespoons coconut oil, melted (or light butter)
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish with a small amount of coconut oil or non-stick cooking spray to prevent the apples from sticking.
  2. In a large mixing bowl, toss the sliced apples with the lemon juice, ground cinnamon, and a splash of vanilla extract. Ensure every apple slice is evenly coated with the spices. Pour the mixture into the prepared baking dish and spread it out evenly.
  3. In a separate bowl, combine the rolled oats, vanilla protein powder, almond flour, and salt. Stir in the melted coconut oil and maple syrup. Use a fork or your fingers to mix until the ingredients form a crumbly, sandy texture. If the mixture is too dry, add a teaspoon of water or more oil.
  4. Sprinkle the protein crumble mixture evenly over the top of the apples. Place the dish in the center rack of the oven and bake for 30 to 35 minutes. The crumble should be golden brown and the apples should be soft and bubbling.
  5. Remove the dish from the oven and let it sit for at least 5 to 10 minutes before serving. This allows the juices from the apples to thicken slightly, making for a much better serving experience.
