Ingredients

Scale
  • 2 cups old-fashioned rolled oats
  • 2 scoops vanilla protein powder (whey or plant-based)
  • 1 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 large apples, peeled and diced small
  • 2 large eggs
  • 1 cup unsweetened almond milk
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Generously spray a 12-cup muffin tin with non-stick cooking spray or line with silicone muffin liners to ensure easy removal after baking.
  2. In a large mixing bowl, whisk together the rolled oats, protein powder, cinnamon, baking powder, and salt. Make sure the protein powder is well distributed through the oats to avoid any clumps.
  3. In a separate medium bowl, beat the eggs. Whisk in the almond milk, maple syrup, and vanilla extract until the mixture is smooth and fully combined.
  4. Pour the wet ingredients into the dry ingredients. Stir well with a spatula until all the oats are moistened. Gently fold in the diced apples so they are evenly spread throughout the batter.
  5. Divide the mixture evenly among the 12 muffin cups, filling each one nearly to the top. Bake for 20 to 25 minutes, or until the tops are golden brown and firm to the touch. Let them cool in the tin for 10 minutes before transferring to a wire rack.
