- 1 cup cottage cheese
- 1/2 cup almond flour
- 1 egg
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large chicken breasts, cooked and shredded
- 1 cup spinach (optional)
- 1/2 avocado, sliced (optional)
- Olive oil for cooking
Instructions
- In a bowl, mix cottage cheese, almond flour, egg, garlic powder, salt, and pepper until well combined.
- Heat a non-stick pan over medium heat and add a little olive oil.
- Pour a portion of the mixture into the pan to form a flatbread and cook for about 2-3 minutes on each side until golden brown.
- Repeat the cooking process with the remaining mixture until all flatbreads are cooked.
- To assemble, lay out the cooked flatbread, add shredded chicken, spinach, and avocado as desired.
- Roll up the flatbread to create a wrap and serve immediately.
Notes
Store leftovers separately in airtight containers in the refrigerator. Flatbreads stay fresh for 3 days, while chicken lasts for 4 days.
