Ingredients

  • 1 cup cottage cheese
  • 1/2 cup almond flour
  • 1 egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large chicken breasts, cooked and shredded
  • 1 cup spinach (optional)
  • 1/2 avocado, sliced (optional)
  • Olive oil for cooking

Instructions

  1. In a bowl, mix cottage cheese, almond flour, egg, garlic powder, salt, and pepper until well combined.
  2. Heat a non-stick pan over medium heat and add a little olive oil.
  3. Pour a portion of the mixture into the pan to form a flatbread and cook for about 2-3 minutes on each side until golden brown.
  4. Repeat the cooking process with the remaining mixture until all flatbreads are cooked.
  5. To assemble, lay out the cooked flatbread, add shredded chicken, spinach, and avocado as desired.
  6. Roll up the flatbread to create a wrap and serve immediately.

Notes

Store leftovers separately in airtight containers in the refrigerator. Flatbreads stay fresh for 3 days, while chicken lasts for 4 days.
