High-Protein Loaded Sweet Potato Boats with Beef

Description

A nutritious and delicious weeknight dinner featuring sweet potatoes loaded with beef, black beans, and cheese.


Ingredients

  • 2 large sweet potatoes
  • 1 lb ground beef
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Pierce the sweet potatoes with a fork to allow steam to escape while baking.
  2. Place the sweet potatoes on a baking sheet and bake in the oven for about 45-60 minutes, or until they are soft when pierced with a fork.
  3. While the sweet potatoes are baking, heat a skillet over medium heat. Cook the ground beef until it is browned, breaking it apart with a spoon. Once browned, stir in the black beans, corn, garlic powder, paprika, salt, and pepper. Cook the mixture until everything is heated through.
  4. When the sweet potatoes are done, remove them from the oven and let them cool slightly. Cut the potatoes in half lengthwise and gently scoop out a little of the flesh to create a ‘boat.’ Fill each sweet potato with the beef mixture, then top with shredded cheese. Place them back in the oven for an additional 5-10 minutes, or until the cheese has melted. Garnish with fresh cilantro if desired and serve.

Notes

Choose firm sweet potatoes with smooth skin for best results. Customize spices to suit your preferences.
