- 2 large sweet potatoes
- 1 lb ground beef
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup shredded cheese (cheddar or your choice)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C). Pierce the sweet potatoes with a fork to allow steam to escape while baking.
- Place the sweet potatoes on a baking sheet and bake in the oven for about 45-60 minutes, or until they are soft when pierced with a fork.
- While the sweet potatoes are baking, heat a skillet over medium heat. Cook the ground beef until it is browned, breaking it apart with a spoon. Once browned, stir in the black beans, corn, garlic powder, paprika, salt, and pepper. Cook the mixture until everything is heated through.
- When the sweet potatoes are done, remove them from the oven and let them cool slightly. Cut the potatoes in half lengthwise and gently scoop out a little of the flesh to create a ‘boat.’ Fill each sweet potato with the beef mixture, then top with shredded cheese. Place them back in the oven for an additional 5-10 minutes, or until the cheese has melted. Garnish with fresh cilantro if desired and serve.
Notes
Choose firm sweet potatoes with smooth skin for best results. Customize spices to suit your preferences.
