  • 1 lb Sushi-grade Ahi Tuna, cut into 1/2-inch cubes
  • 2 large ripe Avocados, diced
  • 1 cup English cucumber, diced
  • 1/2 cup shelled edamame
  • 2 green onions, thinly sliced
  • 1 tablespoon sesame seeds (toasted)
  • 2 tablespoons soy sauce (or liquid aminos)
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon Sriracha (adjust to taste)
  • 2 tablespoons Japanese mayonnaise (Kewpie)
  • Optional: Prepared sushi rice or cauliflower rice for the base

Instructions

  1. Using a sharp knife, carefully dice your sushi-grade ahi tuna into bite-sized cubes, approximately 1/2 inch in size. Place the tuna cubes into a medium-sized glass mixing bowl and keep them chilled while you prepare the other ingredients.
  2. In a small bowl, combine the Japanese mayonnaise, Sriracha, soy sauce, and toasted sesame oil. Whisk the ingredients together until the sauce is smooth and creamy. Taste the sauce and add more Sriracha if you prefer a heavier spice level.
  3. Pour the spicy sauce mixture over the cubed tuna. Gently toss the tuna with a spoon until every piece is evenly coated. Let the tuna sit for about 5 minutes in the refrigerator to allow the flavors to penetrate the fish.
  4. If you are using rice or greens as a base, divide them into two serving bowls. If you prefer a lighter option, you can skip the base entirely and serve the tuna mixture directly in the bowl or inside the avocado skins.
  5. Top your base with the marinated spicy tuna. Add the diced avocado, cucumber, and edamame around the tuna. Sprinkle with sliced green onions and toasted sesame seeds for crunch and extra flavor.
