4 large bell peppers (any color, tops removed and seeds cleaned out)
1 cup uncooked quinoa (rinsed thoroughly)
2 cups vegetable broth
1 can (15 oz) black beans, drained and rinsed
1 cup frozen corn
1 cup diced tomatoes (canned or fresh)
1/2 cup diced yellow onion
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 cup shredded Monterey Jack or vegan cheese
2 tablespoons fresh cilantro, chopped
1 tablespoon olive oil
Salt and pepper to taste
Instructions
In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the liquid is absorbed. Fluff with a fork and set aside.
Slice the tops off the bell peppers and remove the seeds and membranes from the inside. If the peppers won’t stand upright, slice a tiny bit off the bottom to create a flat surface, being careful not to cut a hole in the bottom.
Heat olive oil in a large skillet over medium heat. Add the diced onion and cook for 3-4 minutes until translucent. Stir in the minced garlic, cubic, and chili powder, and cook for another minute until fragrant.
In a large mixing bowl, combine the cooked quinoa, sautéed onion and garlic mixture, black beans, corn, and diced tomatoes. Stir in half of the cheese and the chopped cilantro. Season with salt and pepper to taste.
Generously spoon the quinoa mixture into each bell pepper, pressing down gently to pack the filling in. Place the peppers upright in a baking dish. Pour about 1/4 cup of water into the bottom of the dish to help the peppers steam.
Cover the baking dish tightly with foil. Bake at 375°F (190°C) for 30 minutes. Remove the foil, sprinkle the remaining cheese on top of the peppers, and bake for another 10 minutes until the peppers are tender and the cheese is bubbly and slightly browned.
