  • 2 cups white whole wheat flour (or oat flour)
  • 1/2 cup vanilla or peanut butter whey protein powder
  • 1/4 cup coconut sugar or granulated sweetener of choice
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup cold unsalted butter, cubed
  • 1/2 cup creamy natural peanut butter
  • 1/3 cup unsweetened almond milk (or milk of choice)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup mini dark chocolate chips

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone baking mat to prevent sticking and ensure even browning.
  2. In a large mixing bowl, whisk together the flour, protein powder, coconut sugar, baking powder, and salt until well combined and free of lumps.
  3. Add the cold, cubed butter to the dry mixture. Use a pastry cutter or two forks to work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized bits of butter remaining.
  4. In a separate medium bowl, whisk together the natural peanut butter, almond milk, egg, and vanilla extract until the mixture is smooth and emulsified.
  5. Pour the wet ingredients into the dry ingredients. Use a spatula to gently fold the mixture together until a shaggy dough begins to form. Be careful not to overmix, as this will make the scones tough.
  6. Gently fold in the mini dark chocolate chips until they are evenly distributed throughout the dough.
  7. Turn the dough onto a lightly floured surface. Gently pat it into a circle about 1 inch thick. Use a sharp knife or a bench scraper to cut the circle into 8 even wedges.
  8. Place the wedges on the prepared baking sheet, leaving about 2 inches of space between each one. Bake for 15 to 18 minutes, or until the edges are golden brown and the tops feel firm to the touch.
  9. Remove the scones from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
