1.5 cups mixed berries (strawberries, blueberries, and raspberries)
1 cup plain non-fat Greek yogurt
1 scoop vanilla protein powder (whey or plant-based)
1 tablespoon honey or maple syrup
1/4 cup unsweetened almond milk
1/2 teaspoon vanilla extract
Instructions
Step 1: Prepare the Fruit – If you are using fresh berries, wash them thoroughly and remove any stems. If using frozen berries, let them thaw slightly for five minutes to make the blending process smoother. Place the berries into the blender first to ensure they are at the bottom near the blades.
Step 2: Add Creamy Elements – Add the Greek yogurt, vanilla protein powder, honey, and vanilla extract on top of the berries. Pour in the almond milk. The liquid helps the blender process the thick yogurt and frozen fruit into a creamy consistency.
Step 3: Blend until Smooth – Pulse the blender a few times to break up the large fruit pieces, then blend on high for about 30 to 45 seconds. You want the mixture to be completely smooth and vibrant in color. If the mixture is too thick to pour, add another tablespoon of almond milk and blend again.
Step 4: Fill the Molds – Carefully pour the mixture into your popsicle molds. Leave about a quarter-inch of space at the top because the liquid will expand slightly as it freezes. Tap the molds gently on the counter to remove any trapped air bubbles.
Step 5: Insert Sticks and Freeze – Place the lids on the molds and insert the popsicle sticks. Put the molds in the coldest part of your freezer. Let them freeze for at least 6 hours, though overnight is best for the firmest texture.
