  • 3 large overripe bananas, mashed
  • 2 large eggs
  • 1/2 cup non-fat Greek yogurt (plain)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups oat flour (or whole wheat flour)
  • 2 scoops (approx. 60g) vanilla whey protein powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (plus extra for topping)

Instructions

  1. Step 1: Preparation: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with non-stick spray or line it with parchment paper to ensure the bread doesn’t stick.
  2. Step 2: Mix the Wet Ingredients: In a large mixing bowl, mash the bananas until they are mostly smooth. Whisk in the eggs, Greek yogurt, and vanilla extract until well combined.
  3. Step 3: Combine the Dry Ingredients: In a separate medium bowl, whisk together the oat flour, protein powder, baking soda, cinnamon, and salt. Make sure there are no large clumps of protein powder.
  4. Step 4: Create the Batter: Slowly add the dry ingredients into the wet ingredients. Stir gently with a spatula until just combined. Be careful not to overmix, as this can make the bread tough.
  5. Step 5: Fold in the Chocolate: Gently fold in the dark chocolate chips. Pour the batter into your prepared loaf pan and smooth the top with a spoon. Sprinkle a few extra chocolate chips on top for a professional look.
  6. Step 6: Bake and Cool: Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
