1 can (15 oz) pumpkin puree (not pumpkin pie filling)
1 can (15 oz) chickpeas, drained and rinsed
1 can (14.5 oz) light coconut milk
2 tablespoons yellow curry powder
1/2 teaspoon ground turmeric
1/4 teaspoon cayenne pepper (optional for heat)
2 cups fresh baby spinach
1 tablespoon lime juice
Salt and black pepper to taste

Instructions
Heat the oil in a large pot or skillet over medium heat. Add the diced onion and cook for about 5 minutes until it becomes soft and translucent. Stir in the minced garlic and grated ginger, cooking for another 1 minute until very fragrant.
Add the curry powder, turmeric, and cayenne pepper to the pot. Stir constantly for about 30 seconds to 1 minute. Toasting the spices in oil helps to release their essential oils and deepens the overall flavor of the curry.
Pour in the pumpkin puree and the coconut milk. Use a whisk or a wooden spoon to stir the mixture until it is smooth and well combined. Bring the sauce to a gentle simmer.
Add the drained chickpeas to the sauce. Reduce the heat to low and let the curry simmer for 10 to 12 minutes. This allows the chickpeas to absorb the flavors of the pumpkin and spices while the sauce thickens slightly.
Stir in the fresh baby spinach and cook for 1 to 2 minutes until it has just wilted. Remove the pot from the heat. Stir in the lime juice and season with salt and pepper to taste. The lime juice is essential as it cuts through the richness of the pumpkin.
