  • 1 lb lean ground turkey
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 bell pepper (any color), chopped
  • 2 cans (15 oz each) white beans (Great Northern or Cannellini), rinsed and drained
  • 1 can (4 oz) diced green chiles
  • 2 cups low-sodium chicken broth
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • Optional: Fresh cilantro and lime wedges for garnish

Instructions

  1. Step 1: Brown the Turkey. Place a large skillet over medium-high heat. Add the ground turkey and cook until it is completely browned and no longer pink. Break the meat into small crumbles as it cooks. Drain any excess fat before proceeding.
  2. Step 2: Prepare the Vegetables. While the turkey is browning, dice the onion and bell pepper. Mince the garlic cloves. Having your vegetables prepped and ready ensures a smooth transition to the crockpot.
  3. Step 3: Combine Ingredients in Crockpot. Transfer the browned turkey into your slow cooker. Add the diced onion, garlic, bell pepper, white beans, green chiles, chicken broth, and all the spices (chili powder, cumin, oregano, salt, and pepper). Stir everything together until well combined.
  4. Step 4: Slow Cook to Perfection. Cover the crockpot with its lid. Cook on the Low setting for 6 to 8 hours, or on the High setting for 3 to 4 hours. The long, slow simmer allows the flavors to develop a deep, rich complexity.
  5. Step 5: Final Seasoning and Thickening. Before serving, taste the chili and add more salt or pepper if needed. If you prefer a thicker consistency, take a potato masher or a large spoon and crush some of the beans against the side of the pot, then stir them back in.
