  • 1 medium head of cauliflower, cut into small florets
  • 2 cups pumpkin puree (canned or fresh)
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth (low sodium preferred)
  • 1 tablespoon olive oil
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground ginger
  • 1/2 cup light coconut milk or Greek yogurt
  • Salt and black pepper to taste
  • Fresh parsley or toasted pumpkin seeds for garnish

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and sauté for about 5 minutes until soft and translucent. Stir in the minced garlic and cook for another minute until fragrant, being careful not to burn it.
  2. Add the cauliflower florets to the pot along with the turmeric and ginger. Stir well to coat the cauliflower in the oil and spices. Let it cook for 2-3 minutes to toast the spices slightly, which enhances their flavor profile.
  3. Pour in the vegetable broth and the pumpkin puree. Stir until everything is well combined. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 15 to 20 minutes, or until the cauliflower is very tender when pierced with a fork.
  4. Once the vegetables are soft, use an immersion blender directly in the pot to blend the soup until perfectly smooth. If you do not have an immersion blender, carefully transfer the soup to a standard blender in batches. Be sure to leave the vent open slightly to allow steam to escape.
  5. Stir in the coconut milk or Greek yogurt to add a final layer of creaminess. Season with salt and black pepper according to your taste. Let the soup warm through for another 2 minutes on low heat before serving.
