1/2 small red onion, thinly sliced into half-moons
1/2 cup white vinegar (or apple cider vinegar)
2 tablespoons water
1 tablespoon granulated sugar
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh dill, chopped
Instructions
Wash the cucumbers and red onion thoroughly. Using a sharp knife or a mandoline, slice the cucumbers into thin rounds. Slice the red onion into thin half-moon shapes. Place both the cucumbers and onions into a large mixing bowl.
In a separate small bowl, combine the vinegar, water, sugar, salt, and black pepper. Whisk the ingredients together vigorously until the sugar and salt have completely dissolved into the liquid.
Pour the vinegar mixture over the sliced cucumbers and onions. Add the fresh chopped dill to the bowl. Toss everything together gently with large spoons until the vegetables are thoroughly coated in the dressing. Cover the bowl and let it sit in the refrigerator for at least 15 minutes before serving to allow the flavors to develop.
