  • 2 cups sweet potato or butternut squash, cubed
  • 1 cup dry quinoa, rinsed
  • 2 cups water or vegetable broth
  • 4 cups kale, chopped and stems removed
  • 1 large apple (Honeycrisp or Gala), sliced
  • 1/2 cup pecans, toasted
  • 1/3 cup dried cranberries
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 3 tablespoons olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt and black pepper
  • For the Dressing:
  • 3 tablespoons tahini
  • 1 tablespoon maple syrup
  • 1 tablespoon lemon juice
  • 2 tablespoons warm water

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the cubed sweet potato (or butternut squash) and chickpeas with 2 tablespoons of olive oil, cinnamon, salt, and pepper on a large baking sheet. Spread them in a single layer and roast for 25 to 30 minutes until tender and slightly browned.
  2. While the vegetables are roasting, combine the rinsed quinoa and water (or broth) in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Once the water is absorbed, remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
  3. Place the chopped kale in a large mixing bowl with the remaining tablespoon of olive oil and a pinch of salt. Use your hands to massage the kale for 2-3 minutes until the leaves become soft, tender, and dark green. This removes the bitterness and improves the texture.
  4. In a small bowl, whisk together the tahini, maple syrup, lemon juice, and warm water. If the dressing is too thick, add one more teaspoon of water at a time until it reaches a pourable consistency. Season with a tiny pinch of salt if desired.
  5. Divide the massaged kale and cooked quinoa among four bowls. Top with the roasted vegetables, chickpeas, apple slices, toasted pecans, and dried cranberries. Drizzle the creamy maple tahini dressing generously over each bowl before serving.
