Cook your chicken breasts by grilling, pan-searing, or roasting until the internal temperature reaches 165°F. Once cooled, dice them into bite-sized pieces. Cook the bacon in a skillet until it is perfectly crispy, then drain on paper towels and crumble into small bits.
Place eggs in a saucepan and cover with water. Bring to a boil, then remove from heat and let sit covered for 10-12 minutes. Transfer to an ice bath, peel, and dice the eggs into uniform pieces.
Wash and dry the Romaine lettuce thoroughly, then chop it into bite-sized pieces. Dice your tomatoes and avocado. To prevent the avocado from browning, you can squeeze a little lemon juice over the slices.
In a small jar or bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper. Shake or whisk vigorously until the dressing is well emulsified and smooth.
Spread the chopped Romaine lettuce across a large platter or divided into four bowls. Arrange the chicken, bacon, eggs, tomatoes, avocado, and blue cheese in neat, parallel rows on top of the lettuce. Sprinkle fresh chives over the top.
