  • 1 large head of Romaine lettuce, washed and dried
  • 1/2 cup extra virgin olive oil
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups French bread or sourdough, cubed
  • 2 tablespoons melted butter (for croutons)
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 large egg yolk (at room temperature)
  • 2 tablespoons fresh lemon juice
  • 23 anchovy fillets, minced into a paste (optional but recommended)
  • Salt and freshly cracked black pepper to taste

Instructions

  1. Step 1: Toast the Croutons: Preheat your oven to 375°F (190°C). Toss the bread cubes with melted butter and a pinch of salt on a baking sheet. Bake for 10-12 minutes or until they are golden brown and crispy. Set them aside to cool completely.
  2. Step 2: Prepare the Dressing Base: In a medium bowl, whisk together the minced garlic, anchovy paste, egg yolk, lemon juice, Dijon mustard, and Worcestershire sauce. Whisk until the mixture is smooth and well-combined.
  3. Step 3: Emulsify the Oil: While whisking constantly, very slowly drizzle in the extra virgin olive oil. Start with just a few drops at a time to ensure the dressing thickens and becomes creamy. Continue until all the oil is incorporated.
  4. Step 4: Season and Cheese: Stir in about half of the grated Parmesan cheese into the dressing. Taste the dressing and add salt and a generous amount of freshly cracked black pepper according to your preference.
  5. Step 5: Assemble the Salad: Tear the Romaine lettuce into bite-sized pieces and place them in a large salad bowl. Pour the dressing over the lettuce and toss thoroughly to ensure every leaf is coated. Add the croutons and the remaining Parmesan cheese, then toss gently one last time.
