  • 2 tablespoons unsalted butter or olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1/2 cup heavy cream (or full-fat coconut milk for a dairy-free option)
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • Fresh chives or parsley for garnish

Instructions

  1. Step 1: Sauté the Aromatics: Heat the butter or olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook for about 5 minutes until it becomes soft and translucent. Stir in the minced garlic and cook for another minute until fragrant, being careful not to let it burn.
  2. Step 2: Prepare and Add Asparagus: Cut the trimmed asparagus into 1-inch pieces. If you want a decorative touch, reserve a few of the tips to garnish the soup later. Add the asparagus pieces to the pot and season with salt and pepper. Stir well to coat the vegetables in the butter and aromatics.
  3. Step 3: Simmer the Soup: Pour the broth over the vegetables. Increase the heat to medium-high and bring the liquid to a gentle boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 12 to 15 minutes. The asparagus should be very tender when pierced with a fork.
  4. Step 4: Blend Until Smooth: Use an immersion blender directly in the pot to puree the soup until it is completely smooth. If you do not have an immersion blender, carefully transfer the soup in batches to a standard blender. Be sure to leave the blender lid slightly vented to allow steam to escape while processing.
  5. Step 5: Finish and Season: Stir in the heavy cream and the fresh lemon juice. The lemon juice is key as it brightens the earthy flavor of the asparagus. Taste the soup and add more salt or pepper if needed. If you reserved the asparagus tips, steam them quickly in the microwave or a separate pan and add them to the top of each bowl before serving.
