Ingredients

  • 1 chopped onion
  • 2 minced garlic cloves
  • 3 sliced carrots
  • 2 chopped celery stalks
  • 1 diced zucchini
  • 1 chopped bell pepper
  • 4 cups vegetable broth
  • 1 cup heavy cream or coconut milk
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sautéing until fragrant.
  2. Add carrots and celery, cooking until tender.
  3. Stir in the zucchini and bell pepper, cooking for another 5 minutes.
  4. Pour in vegetable broth and bring to a gentle simmer.
  5. Add heavy cream or coconut milk, seasoning with salt and pepper. Cook for an additional 10 minutes.
  6. Blend the soup with an immersion blender for a creamy texture or leave it chunky.
