Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sautéing until fragrant.
- Add carrots and celery, cooking until tender.
- Stir in the zucchini and bell pepper, cooking for another 5 minutes.
- Pour in vegetable broth and bring to a gentle simmer.
- Add heavy cream or coconut milk, seasoning with salt and pepper. Cook for an additional 10 minutes.
- Blend the soup with an immersion blender for a creamy texture or leave it chunky.
