- 1 pound elbow macaroni
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1/4 cup red onion, diced
- 1/4 cup celery, diced
- 1/4 cup bell pepper, diced
- 1/4 cup sweet pickle relish
- Salt and pepper to taste
- 1 tablespoon apple cider vinegar
- 1/2 cup hard-boiled eggs, chopped
Instructions
- Cook the elbow macaroni according to package instructions. Drain and set aside to cool completely.
- In a large bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Whisk until smooth.
- Add the cooled macaroni, diced red onion, celery, bell pepper, sweet pickle relish, and chopped hard-boiled eggs to the bowl. Stir gently until coated.
- Taste and adjust seasoning as needed. Cover and chill for at least one hour before serving.
