Description

A playful spin on traditional macaroni salad, bursting with vibrant flavors and textures, perfect for summer barbecues and potlucks.


Ingredients

  • 1 pound elbow macaroni
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/4 cup red onion, diced
  • 1/4 cup celery, diced
  • 1/4 cup bell pepper, diced
  • 1/4 cup sweet pickle relish
  • Salt and pepper to taste
  • 1 tablespoon apple cider vinegar
  • 1/2 cup hard-boiled eggs, chopped

Instructions

  1. Cook the elbow macaroni according to package instructions. Drain and set aside to cool completely.
  2. In a large bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Whisk until smooth.
  3. Add the cooled macaroni, diced red onion, celery, bell pepper, sweet pickle relish, and chopped hard-boiled eggs to the bowl. Stir gently until coated.
  4. Taste and adjust seasoning as needed. Cover and chill for at least one hour before serving.

Notes

For best flavor, consume within 1-2 days. This salad pairs well with grilled meats or sandwiches.
