Instructions
- Preheat the grill to medium-high heat, ensuring it’s hot enough to achieve perfect grill marks on your kebabs.
- Combine in a large bowl lemon juice, olive oil, minced garlic, chopped fresh herbs, salt, and black pepper. Whisk until well mixed to create a flavorful marinade.
- Cut the salmon into bite-sized cubes and add them to the marinade. Toss to coat evenly and let it sit for at least 30 minutes to absorb all those delicious flavors.
- Chop the bell peppers and onion into chunks that are easy to skewer while the salmon is marinating.
- Thread the marinated salmon pieces alternately with bell peppers and onion onto skewers, leaving a little space between each piece to ensure even cooking.
- Place the skewers on the preheated grill. Cook for about 8-10 minutes, turning occasionally, until the salmon is cooked through and flakes easily with a fork.
- Remove the skewers from the grill and serve immediately, garnished with additional herbs or wedges of lemon if desired.
Notes
For best flavor, use fresh herbs and let the salmon marinate longer if possible. Soak wooden skewers in water for 30 minutes prior to grilling to prevent burning.
