Instructions
- Preheat the grill to medium heat.
- In a bowl, mix together the flour, brown sugar, granulated sugar, baking soda, and salt.
- In another bowl, cream the softened butter until smooth. Then, add the egg and vanilla extract, mixing until well combined.
- Gradually combine the dry ingredients with the butter mixture, stirring until just blended.
- Carefully fold in the diced peaches, cinnamon, and oats.
- Using a spoon, drop spoonfuls of dough onto a greased grill-safe pan.
- Grill for about 10-12 minutes, or until the cookies are golden brown.
- Remove the cookies from the grill and let them cool on a wire rack before serving.
