Description

A vibrant and nutritious bowl combining brown rice, black beans, and fresh greens, topped with avocado and lime.


Ingredients

  • 1 cup brown rice
  • 2 cups vegetable broth
  • 1 cup black beans, rinsed and drained
  • 1 cup fresh spinach or kale
  • 1/2 avocado, sliced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Combine brown rice and vegetable broth in a pot; bring to a boil. Reduce heat, cover, and simmer for 45 minutes or until the rice is tender.
  2. Blend spinach or kale with olive oil, lime juice, salt, and pepper until smooth.
  3. Stir in the green mixture into the cooked rice until well combined.
  4. Serve the green rice in bowls topped with black beans, avocado slices, chopped cilantro, and an extra squeeze of lime if desired.

Notes
