Description

Ingredients

  • 2 pounds chicken thighs
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 red onion, sliced
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • Pita bread
  • Tzatziki sauce
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a sheet pan with parchment paper.
  2. Mix together olive oil, oregano, garlic powder, onion powder, salt, and pepper in a large bowl. Add chicken thighs and ensure they are well-coated.
  3. Spread the chicken and sliced vegetables evenly on the prepared sheet pan. Bake for 25-30 minutes or until the chicken is cooked through and vegetables are tender.
  4. Remove the sheet pan from the oven and serve with warm pita bread and tzatziki sauce, garnished with fresh parsley.

Notes

For more flavor, marinate the chicken thighs for a few hours or overnight.
